I felt like inventing my own cupcake last night before watching Free Willy with Karinne, so this is what I came up with. The result was super tasty ... Maybe I can sell my idea to Hey Cupcake!
Makes 12 cupcakes
1/2 cup butter, softened
1/2 cup superfine sugar
1/2 tsp vanilla extract
2 large eggs, lightly beaten
about 3/4 - 1 cup of flour
1/2 tsp baking soda
3 tbsp milk
1 jar of raspberry preservatives or jam
buttercream frosting from any brand
- Preheat the oven to 350°F. Put cupcake cases in muffin pans.
- Put the butter, sugar, & vanilla extract in a bowl and beat until light and fluffy. Gradually add eggs, flour, baking soda, and milk until well mixed. Spoon a large spoonful of batter into each case.
- Spoon a small spoonful of raspberry preservatives on top of the batter in each case.
- Fill each case with batter over the raspberry preservatives about 3/4 of the way.
- Bake the cupcakes in the preheated oven for about 15-20 minutes. Let cool.
- Put on the icing and enjoy!
